Introduction: Our fresh ginger from India is bitingly pungent, slightly sweetish and aromatic flavor, which is more intense than is the case with dried ginger. Fresh ginger is also called "gingerroot" but it is not really a root.

Storing Procedure: The best way to store fresh ginger is in a paper or plastic bag and then seal it and put in the vegetable crisper of the refrigerator, where it will be fresh for weeks. The fresh ginger can be store for long time (for about three months) by breaking it apart, peeling the pieces, and storing them covered in a jar of sherry. Chilled fresh ginger roots can be kept for ten days only.

Fresh ginger juice: Fresh Ginger Juice is very popular in India. Fresh ginger requires particular temperature, humidity/moisture and ventilation conditions. To extract the juice from fresh ginger, first the ginger rhizome is collected in fresh form. Then it is washed properly to get rid of the physical impurities and then by suitable juice extractor the juice is extracted from it and stored in hygienic condition till it is being used. But it is advisable not to stored fresh ginger juice for long period.
History: Fresh Ginger is used in India since a long time in the form of juice, herbs and baked food. The Ancient indian text of Ayurveda say it is Anti-phlegmatic and is very much effective aginst soar throat.
